Udo received his B.Sc. in Honors Zoology from the University of British Columbia and followed this with graduate studies in Biochemistry and Genetics. Several years of research culminated in his best selling book, Fats that Heal Fats that Kill which earned him a PhD. in Nutrition. Udo is a popular guest on nationally syndicated radio and television shows around the world.</p>

			<content:encoded><![CDATA[<p>I have a confession to make &#8211; I used to be a chronic cuticle biter.  By “cuticle biter” I don’t just mean biting my nails when bored until they are a little raggedy. I am talking about chewing and tearing at my cuticles until they bled any time I became anxious or stressed out.  I realized that this was an addictive behavior, but I had been victim to this terrible habit for so long that I did not think there was anything I could do about it. That is, until recently…</p>
<p>The biggest influence in my raw food lifestyle has been David Wolfe, one of the country’s leading nutritionists and advocates of the raw food movement. Years back, I had read an article he had written on Angstrom Minerals. Angstrom minerals are very tiny minerals that are easily absorbed into the cells that offer infinite health benefits. Angstrom is the size of minerals contained in plants and plant foods that we ingest, making them the natural form of minerals for humans to take in. Ingesting the minerals causes the deficient mineral bank in the body to reverse. According to Wolfe, the results are &#8220;increased strength of the immune system, the endocrine system, the digestive system, the skin and increased alertness as well as the ability to focus.&#8221;</p>
<p>I remember being very intrigued by the science behind them and wondered why I had not heard about them before. At the time, however, I thought them too expensive and put them in my “to-look-in-to-later” file.</p>
<p>Years later, Polly and I were ordering supplements for Raw’s supply; we both agreed that we absolutely must invest in Angstrom minerals. I, of course, began to take them myself and noticed the immediate health benefits – I felt stronger, more alert, but also somehow calmer.</p>
<p>However, it was not until one day that I looked down at my nails that I realized how incredibly healthy they looked. I literally felt like I was not looking at my own hands. It had not occurred to me until that moment that I had not bitten my cuticles in over a month – which is exactly the time that I started taking the minerals. My once chewed down excuse for finger nail beds, now harbored beautiful long shiny nails. I was in complete shock. I decided to revisit that “to look into later file” to re-read that article and realized that we had ordered the exact same brand of Angstrom that I had read about all of those years ago.</p>
<p>I truly believe that everything happens for a reason. Even if it is not immediate apparent, oftentimes, your life’s events come full circle to greet you with an answer without even realizing your problem has been solved.</p>
<p>I don’t tell you this to try to sell you the product, or confess my bad habits, but to show you that we need to be completely aware of our bodies at all times. Even though I consider myself an expert on health, I still thought that there were some habits that could just not be broken. I had associated my cuticle biting to a nervous habit – a terrible disease that I would have to live with for the rest of my life and something that could not be solved with what I ingest.  Once again, I was proved wrong by the power of a mineral.  A mineral so strong that it could replace the mineral deficiency in my body that was causing me to be an unnerving basket case, until I was so calm that I did not even realize that the habit had disappeared.</p>
